When it comes to white wine, Canada produces a fantastic array of what are termed fruit wines. The base of the truly stunning Neige Winter Harvest and Neige Premiere Apple Ice Wines that we stock at GP brands is of course apples. In a process that utilises the severity of the Canadian winter weather the fruit is left outside allowing the sugars in the apples to become concentrated, through a process known as cryo-extraction to produce a sophisticated sweet white wine.

Both the climate and the terrain mean that Canada is perfectly suited to producing some of the best Icewines available. By leaving the grapes on the vines to freeze the natural sugars become more intensified allowing for the production of a sweet yet refreshing wine. Riesling, Vidal and Cabernet Franc varieties of grape all respond well to this process, and Canada is responsible for 75% of the world Icewine production.
